Just because Christmas is around the corner doesn't mean you can't still enjoy pumpkin spice! Today's video features a paleo pumpkin loaf (or muffin) mix that is super easy to make! It is mainly made with cassava flour! I adjusted the recipe to make it vegan using Bob's Red Mill Egg Replacer and So Delicious Coconut Milk as substitutes to the egg and milk needed for the recipe. I also lowered the cooking time since I only had an 8x8 pan and the recipe called for a 9x5 loaf pan. Rather than bake it for 40-46 minutes, I went with 30 minutes and it was perfect! This loaf is from Other Foods and is a paleo, grain free, corn free, soy free, and kosher-pareve pumpkin bread mix. I did not add a glaze on it for this video so I wouldn't get the tastes mixed up! Tonight's video is a collection of savory snacks I've received recently! If you, like me, are looking for some healthier snacks, these are a great option because they are lower in calories but packed with flavor still!
